Diced Radish Kimchi is made with white radish (mooli or daikon) and also called Kkakdugi (깍두기). White radishes are cut into small cubes and fermented with sea salt, fish sauce, salted shrimps, red chillies, pears, garlic and more delicious ingredients.
At early stages of life Kkakdugi is crisp and salty. During continued fermentation, saltiness will reduce and sweet umami flavours become enhanced!
